Variety: Wine produced by the excellent white Assyrtiko variety, which is grown in the mountainous areas of Chios.
Altitude: 250 - 350 meters
Harvest: During fist 10 days of September
Yield per acre: 700 - 800 kg
Cultivation: Organic fertilizer (dagger) is used and spraying is done with sulphur and copper four times a year. Vineyards are not watered.
Vinification: The red wine process is followed.
The fermentation is done with the marc remaining in the tank for about twenty days. The process of pressure up to 0.5 bars is followed. No oenological material (e.g. enzymes, yeasts) is added during fermentation, while the cooling and filtration processes are not applied during stabilization.
Pairing with food: Natural Assyrtiko can be paired with lemon meat dishes, non-fat fish and light pastes.
Preservation: It is kept in a cool and humid place, protected from light and high temperature in an oblique position. It is served at a temperature of about 12 degrees Celsius.
Tasting: It is a cosmopolitan wine with a colour that touches the orange. The smell of honey and the wild white flowers of mountainous Chios Island are distinct, while the distinctive acidity of the Assyrtiko variety enhances its personality.
