This rice variety is white, with medium-sized grains of rice that are high in starch. This feature gives a creamy texture to the food while its core remains hard during cooking as the starch of the grain is gradually released.

This makes it the best choice for risotto. Arborio rice was originally grown exclusively in Italy and now its cultivation has spread to other geographic regions.
