VARIETIES: The red Agiannitis and Avgoustiatis varieties are two rare types of Aegean grapes amd are cultivated only by a few wine producers but yield impressive results of the highest quality.
VINIFICATION: The fermentation is done in tanks using a cold extraction method.
AGING: This wine matures and "softens" in oak barrels in the naturally wet and cold cellar of Ariousios Winery, and continues to age in the bottle until it is opened.
PAIRING: Red meat, game, but also pasta and yellow cheeses are all excellent choices for pairing the unique taste of Chios Vita.
PRESERVATION: Keep in a shady and cool place until the bottle is opened to protect its flavor and allow it to further intensify as it continues to age. After opening, let the wine rest before serving.
TASTING: This rare grape variety gives a velvety and soft texture to this wine. Its color is bright red and has a distinct flavor of regional wild herbs.
